Job Summary
We are seeking a skilled Bar manager. Our bar offers a curated selection of signature cocktails, mocktails, and beverages inspired by Indian flavours. To ensure optimal customer satisfaction and operational efficiency, we require a professional who has experience in creating bespoke drink menus, training staff, and managing inventory in alignment with our restaurant’s unique identity.
Responsibilities
- Oversee the operations of The Kokum’s bar, ensuring smooth day-to-day functioning.
- Develop and curate a creative drink menu, incorporating Indian flavours into cocktails and mocktails.
- Train and mentor bar staff in techniques, customer service, and compliance with licensing laws.
- Manage inventory, supplier relationships, and budgets for bar operations.
- Handle customer feedback to continuously enhance the bar experience.
Experience
- Minimum of 3 years of professional experience in managing bars within fine-dining or premium restaurants.
- Demonstrated ability to design and execute signature beverage menus.
- Strong leadership skills with experience in staff management, inventory control, and compliance with licensing requirements.

- Prepare desserts to the highest quality, ensuring consistent presentation and taste.
- Manage inventory for dessert ingredients, including sourcing specialised items.
- Train Commis Chef in dessert preparation and food safety standards.
- Ensure compliance with all health and safety regulations.
- Minimum of 3 years of professional experience in high-end Indian cuisine.
- Proven expertise in creating complex and innovative desserts that align with specific culinary themes.
- Experience in managing a team, sourcing ingredients, and adhering to food safety regulations.
